25 days later....

Well, I guess it's time to update on my progress! 25 days later, I've lost 5 lbs. Now, this was not my goal my goal was 12 lbs. but, I've gotta admit, sticking to a diet is a lot harder than I always give credit for. I've allowed myself a lot of meals that don't conform to my diet plan. And, since Nathan was gone for two weeks, I didn't work out a whole ton during that time. I was busy with the kids, and constantly tired. I went back to the gym today and it felt great! So, I'm congratulating myself on my 5 lbs. lost. Now for the next 5, 10, 15, 20, 25, 30, 35, 40!!!!!!!!!!




Recipe for this week (not 17 day diet approved):

Chicken Pasta Salad:
3 chicken breasts rubbed in Jamaican jerk seasoning
Bacon
1 lb pasta (mostaccoli, or penne work best, or spiral pasta)
Tomato chopped or sliced
Red, orange and yellow pepper sliced
2 carrot sticks chopped
Fat free Italian dressing

Boil noodles, then run under cold water to cool them
Place in bowl and toss with the Italian dressing
Cook bacon until very crispy, wrap in paper towel, crush into bits, add to bowl
Add vegetables to bowl
Cook chicken, cube, allow it to cool a bit, and add to bowl
Toss together
Chill in fridge until cold
Serve!
